🍓 Summer Bliss Bowl: Vegan & Refreshing! 🌸

Summer is the perfect time to fuel your body with light, nourishing foods that leave you feeling energized and balanced. This month's recipe is a vibrant, nutrient-packed Summer Bliss Bowl — an easy, customizable and refreshing dish. 🌿


  • Base:

    • 2 cups cooked quinoa or rice (for extra protein and fiber)

    • 1 tbsp olive oil (or avocado oil for a richer flavor)

    • A pinch of sea salt

  • Fresh Summer Veggies & Fruit:

    • 1/2 cup chopped cucumber

    • 1/2 cup cherry tomatoes, halved

    • 1/2 cup sliced strawberries or mango

  • Toppings:

    • 1/4 cup pumpkin seeds or sunflower seeds (for crunch)

    • Fresh mint or basil leaves, chopped

    • 1/4 cup avocado, sliced

    • A drizzle of tahini or hummus (for creaminess)

  • For the Dressing:

    • 2 tbsp olive oil

    • 1 tbsp lemon juice

    • 1 tsp maple syrup (or agave nectar)

    • 1 tsp Dijon mustard (optional, for a kick!)

    • Salt & pepper to taste


Instructions:

  1. Prepare the Base:
    Cook quinoa (or rice) according to package instructions. Once cooked, drizzle with a little olive oil and a pinch of salt to season.

  2. Assemble the Bowl:
    In a large bowl, layer the quinoa at the bottom. Then add the fresh veggies and fruit (cucumber, tomatoes, carrots, corn, and strawberries or mango) on top.

  3. Toppings:
    Sprinkle with pumpkin or sunflower seeds, top with fresh herbs (mint or basil), and add a few slices of creamy avocado.

  4. Make the Dressing:
    Whisk together olive oil, lemon juice, maple syrup, and Dijon mustard (if using). Season with salt and pepper to taste. Pour over the bowl or serve on the side.

  5. Enjoy!
    Mix everything together just before eating, or leave the toppings and dressing on the side for a DIY-style bowl!
